Foodie FridayIt is the first ever Foodie Friday here at the blog of teresa. I downloaded a recipe book called How to Cook Healthy In A Hurry Volume Two by Helen Cassidy Page. Well I read all the recipes and some of them look mighty good. I thought I would try them and share the experience with you. So there is a video. I am NOT a top chef. I am NOT Julia Child. I do not have a production crew or even a makeup what you see is what you get, froggy voice and all. I do think you might enjoy the process though. I am someone who learns by reading, seeing and then doing. Enjoy the video!




Ziti in a Muffin Cup

12 ounces ziti rigate

1.5 cups part skim milk ricotta cheese

Salt and pepper to taste

1/2 taspon dried oregano

1/2 teaspoon dried basil

1 jumbo egg, slightly beaten

1 cup finely grated Parmesan cheese

1 1/2 cups shredded part-skim mozzarella

1 12 ounce jar of tomato suace

1/4 cup Italian seasoned bread crumbs

Preheat oven to 425 degrees F

Bring a large pot of salted water to a boil. Cook pasta for 5 minutes. drain and reserve.

In a medium-sized bowl combine ricotta, egg, 1/2 cup Parmesan and half of the Mozzarella with the oregano, basil and season with salt and pepper. Spray the muffin cups of a muffin pan with a thin film of cooking spray. Spread a generous spoonful of tomato sauce in the bottom of each cup. Layer with the ziti, then a dollop of the ricotta mixture, Repeat the layering and finish with the remaining Parmesan, Mozzarella cheese and bread crumbs.

Can be made ahead and even frozen at this point.

Bake for 12-15 minutes or until the cheeses are bubble and serve.
